Easy Slow-Cooker Pineapple Chicken

For the first couple years after my son was born, my husband and I worked opposite schedules to save money on childcare.  Right after my little man turned two, I got a full time job and my husband went from cooking to restaurant management; our schedules changed dramatically.  When I stumbled upon the concept of easy slow-cooker recipes and freezer meals, it seriously was a godsend; they made my life so much easier.  I would prep a week’s worth of meals Saturday afternoon and store them in the freezer.  Every night after work, I pulled my meal for the next day and stuck it in the crockpot the next morning on my way out; it was so, so helpful!!

Even though I currently work part-time, I still love creating easy slow-cooker recipes.  It makes dinner time much easier; especially with my growing baby belly taking up most of my energy.  Plus, if we have a fun-filled day planned, it’s so relaxing to know dinner is all taken care of.

I love this pineapple chicken recipe.  Not only is this an extremely easy recipe to throw together, it is also delicious, healthy and very inexpensive.   Everyone at the dinner table loved it and the chicken came out cooked perfectly; there is nothing worse than dry, overcooked chicken.

The ingredients in this recipe are minimal and can be thrown together in a matter of seconds. This is the perfect recipe for busy Moms and other people on the go; just throw it together the morning of or prep in a freezer bag beforehand.

If you prep the ingredients in a large freezer bag, freeze it for a future meal or use within the next two days if your chicken is fresh; just make sure to check the date on the chicken.  If you decide to freeze the meal prior to cooking, just pull from the freezer the day before for thawing and dump it into your crockpot the next day; so easy.   Check out the recipe below!


Easy Slow-Cooker Pineapple Chicken


3 large chicken breasts

one 20 oz. can pineapple chunks (juice included)

3/4 c. BBQ Sauce


  1. Cut chicken into halves and place in slow-cooker
  2. Add pineapple chunks and BBQ sauce
  3. Mix ingredients together; try to get some of the pineapples under the chicken so the chicken cooks in the juices
  4. Cook on Low for 8 hours or High for 4 hours.

*The sauce will be relatively thin due to the pineapple juice.  If you would like it thicker, mix together 1 1/2 tsp. of cornstarch with 1 1/2 tsp. water and add to your slow-cooker at the end.  Cook on High for 10 minutes, then serve.
